Apollo Projects has proudly partnered with Wither Hills since 2008, delivering a long-term expansion programme that increased the winery’s capacity from 6,000 to 15,000 tonnes. Over the next 13 years, numerous projects, and a few glasses of wine, Apollo and Wither Hills developed a special relationship.

Apollo’s scope included full design and build services across multiple stages, beginning with site reorganisation to prepare for the main expansion. This included a new effluent treatment plant sized for 15,000 tonnes, and extensions to the lab, tasting area, and winery offices. Landscaping, parking, and roading upgrades were also completed.

A new receivals and press bay was constructed, and all associated plant was relocated to the new area. Apollo also undertook extensive seismic strengthening and earthquake repairs across the site including tanks, catwalks, the exterior tank farm, restaurant, and front-of-house areas.

One major upgrade involved demolishing the existing cool store and replacing it with a new facility that includes wine and beer storage, plus a kitchen.

Throughout the partnership, Apollo carefully programmed works around harvest schedules to minimise disruption. The result is a robust, high-performing winery that reflects Apollo’s commitment to quality, collaboration, and long-term value.
